quincey


there are quinces about at the moment, thus it is
time to make quince paste! the rigourous
straining and hours of boiling is worth it
when one can have some nice wholemeal crackers
with sheep's milk cheese and quince paste.
it is almost hard to believe such cranky and hard
apple-like creatures can be made into such a smooth, musky,
crepuscule-coloured substance...
